Crepe Cake (recipe)

Crepe Cake is a sophisticated French dessert consisting of multiple thin pancakes layered with cream. Learn how to make this culinary masterpiece.

Ingredients:

For the crepes:

  • 500 ml milk
  • 200 g flour
  • 3 eggs
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 50 g melted butter

For the cream:

  • 500 ml heavy cream (33%)
  • 200 g powdered sugar
  • 1 tsp vanilla extract

Preparation:

  1. Prepare the crepe batter: In a bowl, mix the eggs, sugar, and salt. Add the milk and flour, whisking until smooth. Pour in the melted butter and mix again.
  2. Heat a skillet and cook thin crepes, frying on both sides until golden brown. Let the crepes cool.
  3. Prepare the cream: Whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  4. On a flat plate, place the first crepe and spread a layer of cream. Repeat the process, alternating crepes and cream, until all ingredients are used.
  5. Spread the remaining cream on the top crepe and sides of the cake.
  6. Refrigerate the cake for a few hours to set, preferably overnight.
  7. Serve the cake chilled.
