Tarator (recipe)

Tarator is a traditional cold soup often served as a refreshing appetizer on hot summer days. This soup combines yogurt, cucumbers, garlic, and dill for a rich flavor and creamy texture. Here's how you can make Tarator at home.

Ingredients:

  • 500 ml yogurt
  • 2 large cucumbers
  • 3 cloves of garlic
  • 2 tablespoons olive oil
  • 1 tablespoon finely chopped dill
  • Salt to taste
  • Freshly ground black pepper to taste

Preparation:

  1. Peel and grate the cucumbers.
  2. In a large bowl, mix the yogurt, grated cucumbers, finely chopped garlic, and finely chopped dill.
  3. Add olive oil, salt, and pepper to taste and mix well.
  4. Refrigerate the Tarator for at least 30 minutes before serving to allow the flavors to meld and the soup to chill.
