Lyutenitsa (recipe)

Lyutenitsa is a traditional Bulgarian vegetable spread made from peppers, tomatoes, and eggplants. It is perfect as a dip or sauce.

Ingredients:

  • 2 kg red bell peppers
  • 1 kg tomatoes
  • 1 kg eggplants
  • 2-3 garlic cloves
  • 100 ml olive oil
  • 1 tbsp sugar
  • 1 tbsp salt
  • Pepper to taste

Preparation:

  1. Wash the peppers, tomatoes, and eggplants. Roast the peppers and eggplants in the oven at 200°C until soft, then peel and deseed them.
  2. Blanch the tomatoes, peel the skin, and cut into large pieces.
  3. Pass all the vegetables through a meat grinder or blend in a blender until smooth.
  4. Transfer the mixture to a large pot, add olive oil, sugar, salt, and finely chopped garlic. Simmer over medium heat for about 2 hours, stirring occasionally.
  5. Pour the finished lyutenitsa into sterilized jars and seal.
  6. Serve chilled as a dip or sauce.
