Tulumba (recipe)

Tulumba is a popular dessert made from dough that is deep-fried and soaked in sweet syrup. This traditional dessert is common in the Balkans and Turkey.

Ingredients:

For the dough:

  • 500 ml water
  • 100 g butter
  • 300 g flour
  • 4 eggs
  • A pinch of salt

For the syrup:

  • 600 g sugar
  • 400 ml water
  • Juice of one lemon

Preparation:

  1. In a pot, bring the water to a boil with the butter and a pinch of salt. Gradually add the flour, stirring constantly until the dough pulls away from the sides of the pot.
  2. Remove the dough from the heat and let it cool slightly. Then add the eggs one at a time, mixing thoroughly after each addition.
  3. Transfer the dough to a piping bag with a star nozzle. In oil heated to 180°C, pipe out small pieces of dough and fry until golden brown.
  4. In a pot, combine the sugar and water, bring to a boil, then reduce the heat and simmer for 10 minutes. Finally, add the lemon juice.
  5. Dip the hot tulumbas into the syrup and let them soak for a few minutes.
  6. Serve the tulumbas chilled or at room temperature.
