
Tulumba (recipe)
Tulumba is a popular dessert made from dough that is deep-fried and soaked in sweet syrup. This traditional dessert is common in the Balkans and Turkey.Ingredients:
For the dough:
- 500 ml water
- 100 g butter
- 300 g flour
- 4 eggs
- A pinch of salt
For the syrup:
- 600 g sugar
- 400 ml water
- Juice of one lemon
Preparation:
- In a pot, bring the water to a boil with the butter and a pinch of salt. Gradually add the flour, stirring constantly until the dough pulls away from the sides of the pot.
- Remove the dough from the heat and let it cool slightly. Then add the eggs one at a time, mixing thoroughly after each addition.
- Transfer the dough to a piping bag with a star nozzle. In oil heated to 180°C, pipe out small pieces of dough and fry until golden brown.
- In a pot, combine the sugar and water, bring to a boil, then reduce the heat and simmer for 10 minutes. Finally, add the lemon juice.
- Dip the hot tulumbas into the syrup and let them soak for a few minutes.
- Serve the tulumbas chilled or at room temperature.
