
Kaštradina (recipe)
Kaštradina is a traditional Balkan dish made with dried and smoked mutton, vegetables, and aromatic spices. This is a rich and flavorful dish that is perfect for cold winter days. Here's how you can make kaštradina at home.Ingredients:
- 1 kg dried and smoked mutton
- 2 large carrots, sliced
- 4 potatoes, diced
- 1 large onion, finely chopped
- 3 cloves of garlic, minced
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 liters of water
- Fresh parsley for garnish
Preparation:
- Soak the dried and smoked mutton in water overnight to soften.
- In a large pot, heat some oil and sauté the chopped onion until translucent. Add the minced garlic and sauté for another minute.
- Add the mutton, carrots, potatoes, bay leaves, thyme, and paprika. Pour in the water and bring to a boil.
- Reduce the heat and simmer for about 2-3 hours until the meat is very tender and the vegetables are cooked.
- Season with salt and pepper to taste. Garnish with fresh parsley before serving.
