Kaštradina (recipe)

Kaštradina is a traditional Balkan dish made with dried and smoked mutton, vegetables, and aromatic spices. This is a rich and flavorful dish that is perfect for cold winter days. Here's how you can make kaštradina at home.

Ingredients:

  • 1 kg dried and smoked mutton
  • 2 large carrots, sliced
  • 4 potatoes, diced
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 liters of water
  • Fresh parsley for garnish

Preparation:

  1. Soak the dried and smoked mutton in water overnight to soften.
  2. In a large pot, heat some oil and sauté the chopped onion until translucent. Add the minced garlic and sauté for another minute.
  3. Add the mutton, carrots, potatoes, bay leaves, thyme, and paprika. Pour in the water and bring to a boil.
  4. Reduce the heat and simmer for about 2-3 hours until the meat is very tender and the vegetables are cooked.
  5. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
