Tulumbe (recipe)

Tulumbe are a popular dessert in the Balkans, known for their crispy exterior and juicy interior. This sweet treat is made from simple ingredients and is easy to prepare at home. Here's how you can make tulumbe.

Ingredients:

  • 500 ml water
  • 250 g wheat flour
  • 100 g butter
  • 5 eggs
  • 1 pinch of salt
  • Oil for frying

Syrup:

  • 500 g sugar
  • 300 ml water
  • 1 tablespoon lemon juice

Preparation:

  1. In a saucepan, bring the water to a boil, add the butter and a pinch of salt. Gradually add the flour, stirring constantly, until the dough becomes smooth and starts to pull away from the sides of the pan. Remove from heat and let cool slightly.
  2. In the slightly cooled dough, add one egg at a time, mixing well after each addition, until you get a smooth and shiny dough.
  3. In a deep pot, heat the oil for frying. Place the dough in a pastry bag with a star tip and squeeze it into the hot oil, cutting pieces about 5 cm long. Fry the tulumbe until golden brown on all sides.
  4. Remove the tulumbe and place them on paper towels to drain excess oil.
  5. Meanwhile, prepare the syrup by combining the sugar, water, and lemon juice in a saucepan. Cook over medium heat until the sugar is completely dissolved and the syrup becomes thick.
  6. Dip the hot tulumbe into the cold syrup and let them sit for several hours, preferably overnight, to absorb the syrup well.

Enjoy these delicious tulumbe with a cup of coffee or tea.
