
Kavarma
Kavarma is one of the most famous and beloved dishes in the Balkans. This rich and flavorful stew is made with pork and a variety of vegetables, cooked in a savory sauce. It is often served in traditional clay pots, which adds to the authenticity and warmth of the dish.
Ingredients:
- 1 kg pork (shoulder or leg is best)
- 2 green bell peppers, sliced
- 2 red bell peppers, sliced
- 2 large onions, finely chopped
- 3 tomatoes, peeled and chopped
- 3 cloves of garlic, finely chopped
- 200 ml vegetable or meat broth
- 100 ml white wine
- 2 tablespoons of oil
- Salt and pepper to taste
- Fresh parsley for garnish
Preparation:
- Cut the pork into bite-sized pieces. In a large pot, heat the oil and fry the meat until browned on all sides.
- Add the chopped onions and fry until translucent. Then add the green and red bell peppers, chopped tomatoes, and garlic. Fry for a few more minutes until the vegetables soften.
- Add the broth and wine to the pot, then reduce the heat and let it simmer for about an hour, or until the meat is tender and the sauce thickens.
- Season with salt and pepper to taste. When the kavarma is ready, serve it in a clay pot and garnish with fresh parsley.
