
Prekmurska Gibanica
Prekmurska gibanica is one of the most famous Slovenian desserts, originating from the Prekmurje region. This rich and delicious cake is made in layers of various ingredients, including walnuts, poppy seeds, apples, and cottage cheese. Ingredients:
- 500 g puff pastry
- 200 g ground walnuts
- 200 g ground poppy seeds
- 500 g fresh apples, peeled and chopped
- 500 g cottage cheese
- 200 g sugar
- 200 ml cream
- 4 eggs
- 100 g butter
- 1 tablespoon cinnamon
- A pinch of salt
Preparation:
- Preheat the oven to 180°C. Roll out the puff pastry and place it in a greased baking dish.
- In a bowl, mix the ground walnuts with sugar and a bit of cream until smooth. Repeat the same with the ground poppy seeds.
- In another bowl, mix the chopped apples with cinnamon and sugar to taste.
- In a bowl, beat the cottage cheese with eggs and a pinch of salt.
- Start layering the gibanica: first, place a layer of walnuts on the pastry, then a layer of poppy seeds, followed by a layer of apples, and finally a layer of cottage cheese. Repeat the process until all the ingredients are used up. Pour melted butter over each layer.
- Finish the gibanica with a layer of pastry and pour the remaining butter over it.
- Bake in the preheated oven for about 1 hour until the gibanica turns golden brown.
- Let it cool before cutting into squares and serving.
